Blackened Chicken Pasta
Ingredients
- 12 oz (350 grams) penne pasta
- 8 oz (225 grams) chicken breast
- 2 tablespoons blackened spices
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 2 cups chicken broth
- 3/4 cup heavy whipping cream
- Salt to taste
- 3 dashes ground black pepper
- 1 cup diced green and red bell peppers
- 1/4 cup shredded Parmesan sauce
- 1 tablespoon chopped parsley
- Lemon wedges
Instructions
- Cook the pasta according to the package instructions. Marinate the chicken with the blackened spices seasoning
- Heat up a skillet on medium heat, add the olive oil. Pan-fry the chicken breast, on both sides, until it's cooked. Transfer out and slice into strips.
- Clean the skillet and add the remaining olive oil. Saute the garlic until slightly browned before adding the chicken broth and heavy whipping cream. Season with salt and black pepper.
- Add the pasta and diced bell peppers into the skillet, stir to combine well with the sauce. Top the pasta with the blackened chicken, add the Parmesan cheese, chopped parsley, lemon wedges and serve immediately.

I’ve never heard of black spices. What are they and what do I use if I can’t get them where I live?
It’s used in Cajun and Creole cuisine. You can purchase them ready made in grocery stores or online. Or make your own using these spices: Smoked paprika, sea salt, garlic powder, onion powder, black pepper and cayenne.
Can you recommend a substitute for heavy cream? Or can I exclude it?
The heavy cream is what gives it a lovely, creamy texture. You can substitute with whole milk and butter, or yogurt.

Hi Karen, the sauce is made by cooking the chicken broth and cream together and then top with Parmesan cheese. It’s in the method.

Hi Karen, I bought a bottled blackened spice seasoning, it has a variety of spices like cayenne pepper, etc.
Where do you buy the blackened seasoning for the blackened chicken pasta?
